Chef Matthew brings along with him 30 years culinary experience in various International luxury hotels such as Sheraton, Nikko, Melia and previously with the paradise group in Bali. With his 30 years hospitality career, Chef Matthew has gained an in-depth understanding of how to take Grand Mirage Resort to the new culinary heights.
Quality, passion and respect are the main demands which he places on the ingredients and kitchen team. “I enjoy cooking and any new creation becomes almost meditative, the rhythm & concentration involved & the end result.” His modern approach to cooking is the fusion of Asian and Western cuisine during his 14 years in Asia with traditional French technique and recipes.
